My mom calls these "Not Just Ordinary Carrots" and they're weird, 

but good... nice enough for a side dish when your mother in law comes to 
visit, even.

                          NOT JUST ORDINARY CARROTS

6-7 c. cooked carrots
1 c. mayonnaise
2-3 T. prepared horseradish
2 green onions
salt and pepper to taste
12 finely crushed saltine crackers
1/4 c. melted butter

Slice carrots into rounds and cook until tender.  Meanwhile, combine
mayonnaise, horseradish, finely minced green onions, salt and pepper.  
Turn carrots into mayonnaise mixture and mix well; put into casserole 

dish.  Combine saltines with butter and sprinkle over top of casserole.  

Bake at 350 degrees for 30 minutes.
