The first part of the book provides a background to the development of the restaurants in Paris with chapters on raw materials(the foods themselves), history of food delivery and markets in Paris, the traditions of kitchen, table, service and bread, restaurant decoration and furnishings, and restaurants as painted by artists and written about by famous writers. The second half provides historical details and color photos of some of the most famous restaurants of Paris, area by area. Another chapter examines the contributions of 16 ethnic groups to the foreign cuisine of Paris. A four page bibliography of primarily French sources leads to a comprehensive look at food and dining history in France.
